Einstein Bros. Bagels will add to Illinois State University's Bone Student Center dining options with their anticipated opening in late spring of 2010.
The new store will occupy space currently housing The Cage II Coffee Shop. Their menu will feature the brand's full line of coffees and specialty coffee drinks, signature bagels and a large menu of made-to-order breakfast and lunch bagel sandwiches, panini sandwiches, salads, soups and desserts.
"Campus Dining is thrilled to bring the Einstein Bros. concept to campus," said Arlene Hosea, director of Campus Dining Services. "We feel this store meets the needs we have been hearing from the campus community, a full-service coffee house plus another dining option for students, faculty, staff and University guests with a menu unlike any other on campus."
"Along with the Bone Student Center's new hangout spaces and flexible meeting spaces, we need a strong dining program within the building," said Jim Carlson, executive director of the Bone Student Center. "Einstein's will help us accomplish that goal. They have a comprehensive menu that serves all parts of the day."
Campus Dining and the Bone Student Center are currently in the process of hiring architects for the project. Once construction begins, the two departments will work together to create a temporary coffee spot within the building to accommodate guests in the interim.
"We know students, faculty, staff and University guests will still be looking for a place to grab a cup of coffee and a muffin while we are under construction," said Hosea. "So we are exploring our options as far as providing that service to our community."
